Braised Wisconsin Lamb Risotto
Smoked tomato jus, herb and marrow breadcrumbs.

Seared Duck Breast
Confit and garlic potato, heirloom carrots, wild huckleberry.

Grilled Sustainable Salmon
Warm grains with Swiss chard, roasted sunchokes, and citrus.

Cranberry Bavarois
Candied orange zest, white chocolate.
